Valonga Walnuts
At Valonga farm we grow walnut trees and we specialize in the production and processing of walnuts.
Our goal is to achieve the highest quality of our product, using processes that comply with strict standards of security and food hygiene, whilst carrying out controls at all stages.
On the plantation, we have achieved a great acclimatization of the crop due to good agroclimatic conditions and the presence of permanent controls throughout the production process.
At the beginning of October, the walnuts begin to reach optimum ripeness and this is when we start the collection of the earliest varieties, ending in late October.
Once the walnuts have been collected, we move them to the processing plant, located just a few metres away, where, by means of a cleaning trommel, we remove any remaining septum and wash them with water, to remove dirt and other residue.
Then we perform the first manual selection, removing those that have visible defects or are broken and we dry them in order to reduce moisture by up to 8-10%. Finally, after another controlled manual selection, we remove those that that are empty, or lightweight, and/or with defects. Finally we classify them according to size in the following measures:
- < 30 mm
- 30-32 mm
- 32-34 mm
- 34-36 mm
- > 36 mm
Once prepared for sale, we pack them in bags or mesh bags at 800g or at 1kg and 2kg, 5kg, 10kg, 15kg or 20kg.
We also have a line of shelled walnuts, to be able to supply loose walnuts, both halved and broken.
